When I used my card abroad, the sterling value of my transactions changed slightly over the course of a few days from the original notification. Why is this?

We use the Mastercard exchange rate at the time of the transaction to give you an indication of how much you will be charged but that exchange rate will only be finalised when that transaction is presented to your account by the merchant, which can be a few days later and rates may move in that time. You'll be able to see whether it's presented or not in your transaction detail, if it isn't then the transaction will be marked as "pending" and the rate may still move.
